i am going for some tests this week for my general check up including my prostate and esophagus. please help me pray that all results are okay despite my age and symptoms. i confess to you my brothers and sisters that i am in the best of health now. by His stripes, my body pains are gone and all my illnesses are healed.

By the way, I heard the Philippines had a typhoon. Everyone okay on your end? I don't know the Philippines that well. Maybe it's miles from you?

the typhoon has gone back to the seas. we're okay now but we are used to typhoons, strong and stronger ones. the philippines is in the typhoon belt and we are visited by on the average 20 typhoons a year. not bad, compared to other countries in asia where the typhoons are more destructive. thanks mary again.

I had promised to send you some recipe, so here goes:-



Curried Fried Rice with Ground Beef


Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 4-5

Ingredients:
------------
2 cups RICE
1/4 cup onion
4 Tbsps. escallion
2 cloves garlic
1 large sweet pepper
1 tsp. curry powder
3/4 cup cooked ground beef
1 tsp. sugar

Method
--------
1. Cook Rice. Chop onion and escallion. Minced garlic, cut carrot and sweet pepper into thin strips then set aside.
2. Heat Vegetable Oil in frying pan. Add curry powder and heat thoroughly, then add onions, escallions, garlic, carrot and sweet pepper. Fry lightly.
3. Add beef, rice and sugar and stir until thoroughly combined.
4. Cover, heat through then serve.

Curried Lobster


Preparation Time: 10 minutes
Cooking Time: 15 minutes


Ingredients:
------------
2 medium lobsters
1 tsp. salt
1 tsp. black pepper/white pepper
1 medium onion (chopped)
2 cloves garlic (chopped)
1 Tbsp. VEGETABLE OIL
1 Tbsp. curry powder
1 Tbsp. SOFT MARGARINE
¼ cup water
2 Tbsps. cornstarch

Method
--------
1. Boil lobsters for 15 minutes then allow to cool. Crack the lobster and remove all the meat from the shell and claws.
2. Cut lobster meat into small bite size pieces and season with salt and pepper.
3. Lightly fry chopped seasonings in hot Vegetable Oil, add curry powder and cook for five minutes.
4. Stir in the lobster, add Margarine then mix well and allow to simmer.
5. Combine water and cornstarch, add to mixture to thicken the gravy.
6. Serve in a cantelope shell.

Preparation Time: 15 minutes
Cooking Time: 1 hour, 15 minutes
Serves:



1 kg. Stewing Beef
1/2 cup WHITE CANE VINEGAR
2 cups water
2 Tbsps. CURRY POWDER
1 Tbsp. BLACK PEPPER
1 tsp. salt
1 medium onion, chopped
3 stalks escallion, chopped
1 sprig thyme
1 Tbsp. ginger, diced
5 grains pimento berries
1 small green scotch bonnet pepper, chopped
3 cloves garlic, minced
3 Tbsps. VEGETABLE OIL
3 cups boiling water
1 cup irish potato, peeled and cubed
1 medium carrot, diced
1 can BUTTER BEANS
1 small sweet pepper, cut in strips

Method
--------
1. Trim and clean beef with White Cane Vinegar mixed with two cups water, and then cut beef into cubes.
2. Season beef with 1 tablespoon Curry Powder, Black Pepper, salt, other spices and herbs (reserving 1 tablespoon of the garlic).
3. Heat dutch pot and add Vegetable Oil, burn the remaining curry and garlic in the heated oil.
4. Add the seasoned beef, stir, cover and leave to simmer for ten minutes.
5. Add boiling water, stir well, cover and cook for an additional 40 minutes.
6. Add irish potatoes and carrot and simmer for a further five minutes, lastly add Butter Beans and sweet pepper, stir then turn off flame.

hahaha. thank you for these nice recipes, and as i read them they are good for the heart. i'll just change the vegetable oil to canola or olive oil, change the margarine with something more healthy. what are butter beans? first time to hear.
